Deviled Egg Salad By Jessica Harlan, my daughter is a big fan of deviled eggs (which are always a staple at family gatherings). As I was brainstorming ideas to pack for her lunch, a friend brought by a dozen gorgeous eggs from her flock of hens. And I realized that if Sadie likes deviled eggs, chances are she'll love an egg salad sandwich packed in her lunch. I created my Deviled Egg Salad with all of my daughter's favorite deviled egg ingredients (minced pickles, capers and horseradish) so it has a refreshing tangy flavor that's accentuated by the addition of yogurt. Pack it in your own lunchbox, or serve it atop a salad, in a wrap, or spooned into an avocado half. This year, my eldest started Kindergarten. This was a major upheaval in my household: waking up earlier, homework to deal with, uniforms to buy, and, most dauntingly, I have to now pack her a lunch every single day, as opposed to the 2 days a week she used to go to preschool. Judging from the research I did to come up with some delicious, creative and quick-to-pack lunches, I'm not the only one who struggles to provide my kids with healthy, interesting and fun lunches that can quickly and easily be packed when you're bleary-eyed and rushing in the morning.
